Sometimes bread-making is a labor of love. With all of the kneading, rising, and resting, it's usually several hours before you get to enjoy the delicious results of your effort and patience. This is not one of those times.
These tender and delicious cream biscuits are made from four simple ingredients and take about 15 minutes from start to finish. They're the perfect canvas for everything from good salted butter to lemon curd to jam to ham and cheese. They also make terrific egg sandwiches and strawberry shortcakes.
I've picked up a couple of extra tricks for making these biscuits:
- I don't use self-rising flour. If you have it, use it. It makes the recipe even quicker and easier-- just two ingredients! If you don't, add 2 1/4 teaspoons of baking powder and an extra 1/2 teaspoon of salt along with the all purpose flour.
- I seem to need to add a few more tablespoons of liquid than the recipe calls for to get the dough to come together. So make sure you have a little extra cream (or half and half or milk) in case you need it, too.
I hope you enjoy these (with your tea) as much as I do!
